Tomato Soup!

The Gourmet Girl chose to make fresh tomato soup....lots 'o tomatoes, chicken broth, garlic, onions, olive oil, dash of sugar, and a dash of pepper.  She blended it, and TADA....fabulous tomato soup....the best I have ever tasted.  Gourmet Girl felt it was missing something....hmmmm....she added a touch of salt, some parmesan cheese....hmmm...."Still needs something else," she says.  "Oh, how about some basil.  We need Grampie's fresh basil."  I say that it is not basil growing season in NY right now, so we will have to settle for using dried basil.  Gourmet Girl says that although it is more tasty, fresh basil would be even better!!

GG has decided to make tomato BASIL soup with Grampie over the Christmas holidays.  She will be purchasing (her mama will be) fresh basil from the grocery store; none of this dried basil for her!!

Veal, PF Changs, and Easy Pizzas

I bet that title caught your attention!  Smile. First, let me begin by stating that Gourmet Girl (let's call her GG for short) has been "working," but her mother has some difficulty finding time to update the blog.

GG tried veal cutlets at HEB and being the meat lover that she is decided that we should try to cook these at home.  Okay, for those of you that know me, you can attest that I am not much of a meat eater; suffice to say, I do not know how to cook meat either.  Alas, I decide, for my meat loving daughter, that I can and should learn to be creative when cooking meat.  (I mean, I can cook some ground beef and mix up chicken with some C.O.C soup!)

SOOOO, we purchase the meat the next day, b/c after going through the "way to long" lines, I decide I do not want to go back through them to purchase a few slabs of meat that day!!  We follow the recipe for the marinade that was included with the sample at HEB; GG takes great delight in analyzing and adding the ingredients all the while tasting and smelling all the spices: rosemary, Italian seasoning, garlic, etc...GG approves once cooked....needless to say we are trying them again tomorrow night!

Our lovely friend, Kelly, took us to PF Chang's last weekend, and GG attempted honey chicken, some beef dish with scallions, lettuce wraps, and, oh yes, let's not forget, sticky rice with soy.  She approved of it all and especially enjoyed her sticky rice and the company of our good friend, Kelly and Kelly's other Texas friend.

Easy Pizzas....Ms. Sarah, our other dear friend, gave GG her very own cook book.  GG was all over that; she tabbed all of her favorites.  On Monday, Columbus Day, we purchased ingredients to attempt the making of Easy Pizzas.  We had oodles of fun using some fresh ingredients to concoct these yummy creations.  After Margaret-Jane ate hers, she decided she had put too much garlic on hers.  I could not taste too much, but her ever so keen palate thought we went overboard in the garlic department.

There you have it a two week period in the life of GG and her mama.

Artichoke Chicken

Thanks to a dear friend, Margaret-Jane and I were able to make Artichoke Chicken (AC).  Let me back up.  As I assessed our dinner options on Wednesday evening for Thursday evening's dinner, I realized I did not have one of our staples- cream of chicken (COC) soup.  I text several school friends to locate a can or two so that I do not have to go to HEB, but I have no success.  I decide that a run to HEB after school will have to happen because we are going to make AC.  Lovely surprise-there is a bag on my school door with two cans of COC and CHOCOLATE...somebody loves me.  We are definitely making AC Thursday night.

When we get home, I invite the Gourmet Girl to assist me.  She is ready and eager.  The recipe calls for shredded cheese which is one of Margaret-Jane's favorite ways to eat cheese.  She could hardly stand waiting until we were done creating the AC to have some cheese.

Once we try our creation, we decide that "something" is missing.  Margaret-Jane felt like we needed bread of some sort with the AC, but I thought it needed some other spice....hmmmm.

Tonight we "made" pizza dough in Margaret-Jane's kitchen.  I even let her pretend with my flour.  The smile on her face made the flour mess worth it.  She especially enjoyed throwing her dough into the air and forming a pizza pie....smile.  The joys of make believe.

New Day and vanilla

So today, tonight rather, Margaret-Jane says she wants to try the vanilla....vanilla extract that is.  Okay, I say.  She proceeds to try it and analyze the flavor.  It is bland but strong all at once she says.

I just read my friend's blog about her time with her little one and the disappointment in ending the summer.  I am teary as I lament the end of my summer with Margaret-Jane.  I am hanging on to every moment of this weekend, trying desparately to prolong the summer, the moments with my 6 year old daughter.  Seeking to be in the moment as we savor the weekend is my focus.
